Turkish Style Sausages

These are similar to a kebab and may be cooked on a skewer if you wish.
400g minced lamb
400g minced beef
80g bulger wheat, soaked in sufficient hot water to cover and left for 10 minutes or as the manufacturer recommends
1 small onion, sliced
1 red pepper, sliced
3 garlic cloves
2 tablespoons pine nuts
2 teaspoons ground cumin
4 tablespoons fresh chopped parsley
3 teaspoon salt
1 teaspoon black pepper
1.Mix the meat together in a bowl and mix in the bulger wheat when cold.
2.Put all the other ingredients in a food processor and blend until a paste is formed. Add a little water to loosen if necessary.
3.Mix the paste into the meat combining everything well. Massage the flavours into the meat to make a pliable mixture.
4.Form in to sausage shapes about 10 cm long, around a skewer if you prefer. Leave covered on a tray for 1 hour before grilling , frying or cooking on the barbecue.
