Tangerine Marmalade

Tangerine Marmalade
You will need:
1 kg tangerines
Boiling water
1 kg jam sugar
Juice of 1 large lemon

Wash and quarter the tangerines
Place in a pan and cover with boiling water to about 1 cm above the fruit.
Boil on a simmer for 50 – 60 mins
Whizz the solids in a food processor
Add the jam sugar and lemon juice and an extra 50 ml water and bring to the boil
Boil hard for 4 minutes
Test for a setting point – place a dribble on a cold plate and if it wrinkles when you push it with the finger, it is ready
Set in sterile jars
