Smoked Salmon creamed cheese baskets

This recipe was inspired by the famous cones at the Californian restaurant The French Laundry.
They are delicate batter baskets with a smoked salmon filling.

Ingredients

  • 65 g Flour
  • 2 egg whites
  • 120 g butter
  • 200 g smoked salmon
  • 3 tbs creme fraiche
  • 3 tbs soft cheese
  • 1 tbs double (heavy) cream
  • Sprinkling of sesame seeds

Method

Step 1

For the batter: Mix 65 g plain flour, a tsp salt in a bowl. Cream the butter. Add the egg whites to the flour and stir continuously until soft. Add the butter in thirds, mixing well. Put some baking parchment on a tray and pour in the batter and smooth with a palette knife until it is 2 - 3 mm thick. Sprinkle the sesame seeds on top. Bake for 5 minutes at 200 C and then cut out circles with a pastry cutter. Return the circles to the oven and cook until just pliable but set. Carefully set the circles into a silicone mould and re-bake until set and golden. (Sesame seeds outermost)

Step 2

For the Filling: Chop a handful of chives very finely and chop (don't use a food processor) the smoked salmon. Mix with the chreme fraiche, cream and cheese. Add a third of the chives. Spoon into the cooled baskets and then dress the top with more chives.
