Pepper fried rice

Pepper fried rice is really easy to make and adds an extra flavour to your meal. Fried rice is best made with yesterday’s boiled rice but make sure you cook it through!

Ingredients

  • A little oil
  • Two chopped garlic cloves
  • One red pepper 1 green, chopped
  • 3 cups yesterdays boiled rice
  • 2 eggs

Method

Step 1

Heat the oil and add the garlic and then the peppers

Step 2

Cook until soft then add the rice

Step 3

Cook through until piping hot (Important!)

Step 4

Add one egg which is mixed well, to coat the rice

Step 5

Add another egg not well mixed to create cooked egg in the rice
