This is a little like our onion chutney recipe (Click here for onion chutney) but uses more ingredients.
You need to store in sterile jars. It is ideal for presents!
Chop the onions as finely as you like. I love to have long thin pieces mixed with smaller pieces.
- 100 g butter
- 1 kg red onions chopped
- 150 g brown sugar
- 50 ml white wine vinegar
- 300 ml red wine
- A little oil for cooking
- 1 level tsp allspice
- Salt and black pepper to taste
Heat the oil and add the butter to melt - not too high a light.
Add the onions and cook to translucent, do not burn or brown them.
Season with salt and pepper and add the sugar and allspice, and the liquid ingredients and bring to a simmer, stirring. Keep on checking the marmalade with a metal spoon for little granules of sugar. When there are no more granules, the sugar has dissolved.
Allow the marmalade to simmer until it becomes thick and glossy, add a final knob of butter to dissolve any protein scum (and it tastes wonderful anyway).
Spoon into sterile jars and allow to cool.
