Gorgeous apple pie with cheese pastry

A lovely change to the usual shortcrust! Diana puts cheese into everything!

  • 300 g Plain white flour
  • 1/2 tsp salt
  • 140 g cold butter cut into small pieces
  • 120 g mature cheddar
  • Water to mix
  • 3 large bramley apples
  • Squeeze lemon juice
  • 1 Tbs plain flour
  • 50 ml apple juice
  • 3 Tbs soft brown sugar


Step 1

Sieve the flour and salt together

Step 2

Add the butter and rub to make breadcrumbs

Step 3

Stir in the cheddar

Step 4

Add enough cold water to make a dough

Step 5

Cover and rest

Step 6

Peel core and chop the apples

Step 7

Place in a saucepan, sprinkle over with flour

Step 8

Add apple juice and sugar

Step 9

Heat until simmering, stirring while the sugar dissolves, leave to cool

Step 10

Grease a 9 inch deep pie case

Step 11

Use 2/3 to 3/4 dough roll out to fit the case

Step 12

Spoon the apple mixture into the centre and pile up

Step 13

Roll out the rest of the pastry to make the lid

Step 14

Moisten the edges and pinch together

Step 15

Make 3 steal holes in the top with a knife

Step 16

Bake at 190C Gas 5 375F for 35 to 40 minutes in the centre of the oven.
