Gambas con guindillas

This is a prawn recipe – a mix of a couple of recipes in the book, Basque, by Jose Pizarro. Excellent book – lots of recipes.

This takes about fifteen minutes to cook and you will go a long way to get better in any restaurant.

Ingredients

  • 250 g Guindillas peppers or any ild chillie
  • 250 g Gambos or Dublin Bay Prawns
  • 2 - 3 Garlic cloves finely chopped
  • 150 ml Dry white wine
  • 1 Tbsp Olive Oil
  • Handful of flat leaved parsley

Method

Step 1

Fry the peppers (Notice how fresh they are - do consider growing them) with a hot red pepper for a little heat.

Step 2

Add the garlic.

Step 3

Add the gambas and keep stirring!

Step 4

Season with salt and pepper.

Step 5

Add the wine and reduce the sauce

Step 6

Finish with a dressing of flat leaved parsley.
