This is a prawn recipe – a mix of a couple of recipes in the book, Basque, by Jose Pizarro. Excellent book – lots of recipes.
This takes about fifteen minutes to cook and you will go a long way to get better in any restaurant.
- 250 g Guindillas peppers or any ild chillie
- 250 g Gambos or Dublin Bay Prawns
- 2 - 3 Garlic cloves finely chopped
- 150 ml Dry white wine
- 1 Tbsp Olive Oil
- Handful of flat leaved parsley
Fry the peppers (Notice how fresh they are - do consider growing them) with a hot red pepper for a little heat.
Add the garlic.
Add the gambas and keep stirring!
Season with salt and pepper.
Add the wine and reduce the sauce
Finish with a dressing of flat leaved parsley.
