Making jam is not all the mystery we seem to think it is. And it is great fun, making your own jam. You often find on the television chefs saying they are making jam to add to some dish or other, but in reality they are making sweet, warmed up fruit.

You can use jam sugar, which has the pectin added, or failing that some stewed apple, which is high in pectin. Strawberry jam often needs a lot of pectin, and from time to time it doesn’t set and you simply can’t work out why, but it makes brilliant toppings for ice cream and baking anyway!
