A really tasty pudding which can be done either in the microwave or the oven, depending on how you prefer. It is a simple recipe and really easy to make.
- 150g butter
- 150g soft brown sugar
- 150g self-raising flour
- 30g cocoa powder
- 2 eggs
- 80ml double cream
- 100g dark chocolate, chopped into small pieces
Butter a 1.2 litre puddings basin.
Cream the butter and sugar together until fluffy.
Sieve the flour and cocoa together in a separate bowl.
Sprinkle 2 tablespoons of the flour mixture over the creamed mixture.
Beat in the eggs.
Stir in two tablespoons of the cream and half of the chocolate.
Fold in the flour and cocoa.
Put the rest of the cream and chocolate in the base of the basin.
Spoon the pudding mixture carefully over the top.
Bake in the oven at 180C / gas mark 4 for 25-30 minutes until firm but springy or cover with cling film and microwave for 3-5 minutes or until the pudding reaches the film.
