There are so many recipes for baked beans that you might never want to buy them again, except they are so cheap. However, it has to be said that these baked beans and the ones you get in a tin are worlds apart!
The majority of baked bean recipes are made from haricot beans, and you can grow or buy enough of them to last ages. The basic idea is to create a tomato sauce in which you bake the beans. This recipe calls for a kilo of haricots.
- 1 Kg dried haricot beans, soaked overnight in water
- 25 finely chopped tomatoes
- 4 garlic cloves chopped finely
- 4 leeks or red onions
- 8 teaspoons of sugar
- 1 tablespoon olive oil
- 400 ml passata
- Salt and pepper to taste
Soak the beans in water overnight
Chop the tomatoes into 1 cm pieces
Finely chop the leek or onion
Lightly sweat the onion and garlic in the olive oil and add the tomatoes and pasta and bring to the boil
Drain the haricot beans and add them to the pasta, with the sugar and seasoning
Transfer to an ovenproof dish and bake at 160C (325 F) or 30 minutes
After 30 minutes, stir again and check the seasoning. Continue to bake for 30 more minutes.
