Easy meatballs in Tomato Sauce

Easy Meatballs in Tomato Sauce can be done with pork mince or a mixture of beef and pork.
Serves 4
For the meatballs:
500g lean minced beef,
80g fresh breadcrumbs
1/2 tsp salt
Black pepper to taste
2 tbsp fresh chopped mixed herbs, thyme, parsley, marjoram and sage are good to use
For the sauce:
2 tbsp olive oil
1/2 a medium onion, finely chopped
2-3 cloves garlic, chopped
1/2 tsp salt
Black pepper
1 tsp soft brown sugar
1/2 tsp dried oregano
2x 400g cans chopped tomatoes or 1 can and a carton of passata A few basil leaves if you like




1. Preheat the oven 200C/gas mark 6 and oil a large baking sheet or place. Piece of non stick paper over.
2. Make the meatballs , put all the ingredients into a mixing bowl and mix well together with your hands.
3. Divide into 24 small balls and place on the baking sheet slightly apart so they cook evenly.
4. Cook in the oven for 15-20 minutes until good and brown.
5. Make the sauce, fry the onion and garlic in the oil gently for a few minutes.
6. Add the tomatoes and all the other ingredients and simmer for 20 minutes.
7. When the sauce is cooked add the cooked meatballs and simmer for a couple of minutes.
8. Serve with pasta of your choice and plenty of cheese.
