Shawarma is one of the many kinds of kebab that comes from Turkey and many other countries in the area. The key to the flavour and texture to this dish is the second frying. So the chicken can be prepared earlier and left to cool after the first frying.
500g chicken breasts, cut into about 2cm chunks
2 level tsp. Ground cumin
2 level tsp paprika
1/2 tsp ground allspice
1 level tsp turmeric
2 chopped garlic cloves
1/4 tsp cayenne pepper
1/2 tsp salt
Pinch black pepper
4 tablespoons oil
1. Put all the spices , garlic ,salt and oil in a bowl and mix well together.
2. Ad the chicken pieces and coat well. Cover and leave for a couple of hours in a cool place.
3. Heat a couple of tablespoons of oil in a pan and fry the chicken all over. Then drain and leave on a plate.
4. Re-fry in an almost dry pan before serving.
