Ingredients
  1. 2.5 kg marrows
  2. 300 g crystal ginger
  3. 2.5 kg sugar
  4. 200 ml water
Instructions
  1. Add water to the peeled marrows and boil. Mash to a pulp.
  2. Add the juice and pulp of the lemons, lemon zest and ginger.
  3. Bring to the boil, stirring in the sugar.
  4. Test for set and bottle accordingly in sterile jars.
